Just got done with the third sustainability project of Josephine who is into the business of selling a type of Kenyan food called mukimo in the market. I accompanied her to the market and we bought the maize and beans which she mixes together, boils them for a few hours then adds some traditional vegetables and when they get cooked she mashes them and later packs it in a backet and goes to the market to sell.
We also bought a bigger pot so that she could be able to cook more food for her customers. I got a chance to accompany her to the market and her food is really on high demand because the people selling at the market hardly get time to go for lunch so they depend on Josephine’s food. Her kitchen is outside so she sorts the maize and the beans at night so that when she wakes up in the morning she will just light the fire and cooks the food then takes to the market by lunch time.
